Brazilian coffees are often classified according to the New York stock exchange standards, where "NY 2/3" refers to the permissible defect count in the coffee beans, with NY 2 representing the highest quality. Screen size is another key characteristic, particularly the larger screen 17/18 beans, which are known for their superior quality.

The flavor profiles of Brazilian coffees range from "strictly soft" to "fine cup" and "good cup," with the "fine cup" offering a smoother taste compared to the more robust "good cup." These coffees are typically known for their soft, clean taste, featuring sweet, fresh notes and a low to medium acidity.
